I made some cookies for the Relay-for-Life last weekend and everyone wanted the recipe. So John, if you're reading, tell all the girls in your office that here it is.
Peanut Butter-Oatmeal-Chocolate Chip Cookies
3/4 cup butter, softened
1/2 cup peanut butter (I use Adams crunchy PB)
1 cup granulated sugar
1/2 cup packed brown sugar
1 teaspoon baking powder
1 teaspoon baking soda
2 eggs
1 teaspoon vanilla
1 1/4 cups all-purpose flour
2 cups rolled oats
1 cup semisweet chocolate chips
Preheat oven to 375 degrees.
1) Beat butter and peanut butter with an electric mixer until combined. Add granulated sugar, brown sugar, baking powder and baking soda. Beat until combined. Beat in eggs and vanilla until combined. Beat in as much of the flour as you can with the mixer. Stir in the rest. Stir in the rolled oats and chocolate chips.
2) Drop dough by rounded teaspoons 2 inches apart onto an ungreased cookie sheet. Bake for about 10 minutes. Cool on a wire rack.
They're really delicious and have something for cookie lovers of all kinds!
